Cran-Apple Quinoa Crisp

We’ve swapped Earnest Eats American Blend Hot and Fit Cereal for whole oats in one of our favorite holiday recipes to give it a Superfood and yummy goodie boost!

Cran-Apple Quinoa Crisp Recipe
4 cups peeled chopped apples
1 12 ounce bag of fresh cranberries
2 tablespoons white whole wheat flour
3/4 cup pure cane sugar
1 ½ cups Earnest Eats American Blend Hot cereal
3/4 cups chopped pecans
1/2 cup white whole wheat flour
3/4 cup firmly packed brown sugar
1/2 cup butter or margarine melted
handful of pecan halves and whole cranberries for garnish

Combine apples, cranberries and 2 tablespoons flour, tossing tocoat.
Add cane sugar mixing well. Place in a two quart casserole dish.
In a separate bowl, combine Earnest Eats hot cereal, chopped pecans,1/2 cup flour and brown sugar
Add melted butter and stir well.
Spoon topping over fruit mixture.
Bake, uncovered at 350 for 40 minutes
Garnish with pecan halves and cranberries.
Bake 5 minutes longer

Yield 8 generous servings.
