Earnest Eats American Ice Cream Sandwiches

Hi Friends –

Our friend Greg made us some delicious ice cream sandwich cookies with our American Blend Hot & Fit hot cereal over the labor day weekend.  I thought we’d share them with you – his recipe is below.  We found the superfood grains – quinoa, amaranth – and the additional goodies like cranberries, almonds and flax – gave the cookies a wonderful texture and extra health punch to an indulgent desert.  We hope you enjoy them!

Earnest American ice cream cookie sandwich

For Cookies

1 cup shortening (can substitute butter)

1 cup packed brown sugar, organic or natural

1/2 cup sugar, organic or natural

1/4 cup water

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1/4 teaspoons salt

2 cups Earnest Eats American Hot Cereal

 In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats.  Drop dough by tablespoonfuls into 4” diameter cookie cutter placed on greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.

 For Ice Cream Sandwiches

Purchase favorite vanilla bean ice cream (or ice cream alternative) in pint container.

Make sure Ice Cream is rock solid and remove package wrapper.

Cut 4” rounds that are ¾” thick

Make your sandwich

Place back in freezer until ready to serve
